Over the past two years, a considerable number of companies and restaurants have left downtown Denver.
The Colorado Restaurant Association reports that nearly 200 eateries have closed. Even with the ongoing closures, several eateries are still trying to introduce new ideas to the community.
“A lot of people will walk in here and say, ‘I don’t know what this is, but this is not a deli,'” Anthony Lygizos stated. “But we like that, we like shaking it up.”
The owner of Leven Brands, which consists of multiple restaurant concepts, including Leven Deli, is Lygizos.
“We say everybody’s welcome; nobody leaves hungry,” he stated.
Leven is a neighborhood gathering that combines elements of a deli, bakery, coffee shop, and wine shop. Additionally, Leven is growing as a significant number of restaurants have been leaving Denver.
“We believe in Denver, there’s no question about it. and we believe that Denver is coming back, bouncing back, and addressing some of the issues that have been crippling for a lot of businesses.”
In January, the business debuted Leven Supply in Washington Park. Later this year, it plans to open Leven Downtown, a new full-service sibling concept.
“We’re excited about downtown, honestly,” Lygizos stated. “It is a really large build; it will have about 420 seats.”
Serving sandwiches, salads, and entrees with a significant pizza and pasta component, the new concept will carry on the traditions of its sibling concepts.

If it weren’t for the overwhelming support from the city and the building’s developer, the company wouldn’t be growing in Denver’s Central Business District, where the new concept is located.
“Mayor Johnston was part of the groundbreaking ceremony there and their office is really stepping forward and putting their money where their mouth is,” Lygizos stated.
Additionally, he is interested in the city’s advancements, but he is also committed to making his own changes—the Leven way.

“It means this pervasive force that helps improve or make better,” Lygizos stated. “At our core, we really are those fundamental concepts of trying to provide a better culture, environment, jobs, pay, hours, etc.”
It is anticipated that Leven Downtown would open in late 2025.
